Super creative marriage (literally and figuratively) of Indian and Mexican cuisines. They also own a co-op called Super Cope featuring artisan food items (mezcal, honey, masa, salsas) and tabletop items supporting the artisans.
Notes from Masala y Maíz: Masala y Maíz is a restaurant in Mexico City by chefs Norma Listman and Saqib Keval that explores the migration of ingredients and cooking techniques between India, East Africa and Mexico. Their food is based on years of research and study of the family recipes of both, as well as the movement of ingredients between the three continents.
The restaurant is a reflection of the chefs' beliefs that food can be used as a powerful tool for environmental & social justice and that chefs have the responsibility to advocate and work towards bettering labor conditions for everyone in the food industry.
